DELICIOUS CHICKEN TIKKA AND FAJITA PIZZA RECIPES..

Pizza lovers out there you need to try this homemade pizza recipes for an amazing baking experience.Pizza is loved by people throughout the world and so is it in our family. I first tried making pizza 2 years back but had to struggle to find the perfect recipe for the dough as sometime it went too hard and thick or too soft and as we all know a good pizza is one with the best bread and flavor. So after sometime i finally got the dough right and since then have been trying to perfect it like the pizza we find in restaurants This pizza recipe you can use either for a thin crust or a thick crust pizza.


CHICKEN TIKKA PIZZA



DOUGH RECIPE:

2 Cup all purpose flour
1 and 1/2 tsp yeast
1 and 1/2 tsp sugar
1 tsp salt
1/4 cup milk
6 tbsp oil
water as per required

PIZZA SAUCE:

2 tbsp oil
1 tbsp ginger garlic paste
2 cup tomatoes
1 tsp red chilli flakes
1 tsp white pepper
1 tsp oregano
1 tsp salt
1 cup tomato ketchup
1 tbsp soy sauce
1 tbsp Worcestershire sauce

CHICKEN TIKKA FILLING:

1/2 kg chicken
1 tbsp tikka masala
1 tbsp ginger garlic paste
1/4 cup yogurt
1 tbsp lime juice
2 tbsp oil

GARNISH:

1  green capsicum
1  red capsicum
1 tomato
1 cup onion
black or green olives


PROCEDURE:


For the dough, in a bowl add the ingredients dry ingredients, flour, salt, sugar and yeast and then the milk, oil and water as per required to mold the dough, then keep the dough in an air tight container for 1-2 hours. Also see my chicken bread post for the full dough recipe

This pizza sauce can be made an stored for 2-3 days for this in a pan add oil and onions and cook until the onions are nicely caramelized then add the ginger garlic paste and saute till the smells goes away now add the tomatoes ( you can also blanch and grind then in the grinder to make a thick paste) cook the tomatoes until they are nice and soft then add ketchup and cook for 2 minutes then add the remaining spices and cook for another 5-10 mins until the desired consistency is reached.

For the tikka filling take the chicken and cut it into small cubes then add all the ingredients expect the oil in a pan with the flame off mix it for two to 3 minutes then add oil and turn the flame on, Cover it and cook for 5 minutes until the chicken is cooked through.

After 1 hour check take the dough out it must have risen nicely and would feel light and airy. Put the dough on a flat surface sprinkle flour and roll it out evenly using a rolling pin as per your pan shape and size. Now put it in an oil greased pan and poke small holes using a fork so it cooks evenly and thoroughly. Now spread the sauce all over the dough, then add your chicken tikka filling top it with vegetables of your choice, then add cheese i used mozzarella cheese only but you can mix cheddar and mozzarella for extra cheesy pizza.Add olives on top and sprinkle some oregano and let it bake in a pre-heat oven for 15 minutes and 200 degree.



CHICKEN FAJITA PIZZA

CHICKEN FAJITA:

1 and 1/2 tbsp oil
300 gram chicken stripes
1 tsp salt
1 tsp red chilli flakes
2 tsp red chilli powder
1 tsp oregano 
1 tsp garlic powder
1 and 1/2 tsp lemon juice

Following the same recipe of the dough and sauce i just made another chicken filling of chicken fajita. So in a pan add oil and chicken cook until the chicken becomes white, now add all the remaining ingredients one by one and cook until the chicken is tender, then add the vegetables and saute for 2-3 minutes and your chicken fajita filling is ready.

You can make two dough separately or make one large dough doubling the ingredients of everything in the dough recipe and later split the dough in half for two medium size pizza.
